A stainless steel knife for hard food: (SR-900) The Gyuto is the Japanese version of the classic western chef's knife. It is a true multi-purpose knife that can perform a wide variety of tasks, can be used with a variety of cutting techniques and is suitable for slicing the vast majority of meats, fish, vegetables and fruits. The pointed blade tip of the Gyuto is good for precision cuts or working in tight spaces.
The relatively flat heel portion of the blade is excellent for "rock chopping" (a technique of cutting, chopping, or mincing food by rocking the blade edge from tip to heel during the cut). and it is also high enough to provide good knuckle surface contact when tap chopping with the center or tip of the blade. Finally, virtually any part of the blade can be used for "push cut" or "pull cut". The blade of the Japanese Gyuto is usually thinner and lighter than that of a Western chef's knife, and the balance point of the Gyuto is usually slightly further forward, towards the tip. The combination of these features makes the Gyuto extremely manoeuvrable and precise in use. Gyuto are typically available in blade lengths between 180 and 300mm, although they can be up to 360mm long. Sizes from 180mm to 210mm are often recommended to home cooks, while 240mm and 270mm sizes are often chosen by serious amateurs and professional chefs.
