Description
The "Kiritsuke" is a very special knife, a cross between a Yanagiba and a Usuba. It can perform versatile functions and is the favorite go-to knife of many Japanese chefs. In most Japanese restaurants, only the chef is allowed to use the knife, which is why the Kiritsuke is often considered a symbol of expertise and status.
